On the sixth floor of Tivoli Palazzo Gaddi, with a 360-degree view of the Duomo, Palazzo Vecchio, the Medici Chapels and terracotta roofs running to the hills. The bar is shaped like a hot-air balloon. Chef Iside De Cesare signs the kitchen: her "Bolla" is a small crisp sphere with sea, meat or vegetable fillings, served with signature cocktails and Versilia seafood crudo from sunset.
